Here are 2 recipes I love with my Westward Ho! BBQ Rub:
BBQ Ribs- PREP 1-3 DAYS BEFORE
8 pounds of baby back pork ribs
1-2 C chicken broth
1 1/2 C Store-bought OR homemade BBQ (recipe to follow)
4 T Aimee's Home Cookin' WESTWARD HO! BBQ Rub
Preheat oven to 350 F. Place each rack of ribs on a double layer of foil; sprinkle rub all over ribs. Wrap racks individually and divide between 2 baking sheets.
Bake ribs until very tender but not falling apart, about 2 hours. Carefully unwrap ribs; pour any juices from foil into a 4-Cup heatproof measuring cup. Let ribs cool completely. Cover and chill juices. Rewrap ribs in foil and chill in refrigerator.
(If you bake in advance, the flavors will be more developed and the cold ribs will hold together better on the grill as they heat through).
Build a med-hot fire in a charcoal grill, or heat gas grill to high. Add broth to rib juices if needed to measure 1 1/2 Cups. Whisk in BBQ sauce to blend.
Grill ribs, basting with BBQ sauce mixture and turning frequently, until lacquered and charred in places and heated through. 10 minutes or so. Transfer to cutting board, cut between ribs to separate. Transfer to a platter and serve with additional BBQ sauce.
2 C ketchup
2 T butter
1/2 C cider vinegar
2 T Brown sugar
2 T molasses
2 T agave or honey
1/4 C Worchester sauce
1 small onion, minced
2 T Aimee's Home Cookin' WESTWARD HO!
1/4 C water
Melt butter in a 2 quart sauce pan and add minced onion, cook until soft, 5 minutes.
Add the rest of ingredients and simmer 30 minutes.
