Gunsight Game Rub is a unique blend of Juniper Berry & Vermont Maple Sugar plus a few more savory herbs for balance. Perfect on any game, including fowl elk, venison, pronghorn, turkey and beef.
Try mixing into ground elk for burgers, or on a beef roast too. Rub generously on wild turkey let marinate for 1 day, roast as usual.
Pot Roast with Root Vegetables
A 4-pound Beef Chuck Roast, or any game roast on hand
6 pieces of thick cut, good quality bacon.
2 C red wine
1 C beef broth
2 large onions, sliced thin
4 shallots, peeled & cut in quarters
12 cloves of garlic, peeled and cut in half
3 Bay leaves
1 C baby carrots, cut in thirds
1 celery root, peeled, cut into small cubes
1 turnip, peeled and cut into small cubes

Rub Gunsight all over roast. In a heavy bottomed saute pan,(Not non stick) cook bacon until crispy, set aside on paper towels. Reserve a small amount of bacon grease to cover bottom of pot,(2 Tablespoons) turn up heat to med hi and get very hot so you see a bit of smoke. Add beef and brown on each side roughly 12 minutes total. Transfer beef to plate. Add red wine to pot, deglaze bacon bits and beef bits if any remain, cook 5 minutes, add broth and stir.
In your slow cooker, scatter onions, root veggies and bacon. Place roast on top of veggies and add the garlic and shallot. Add the reduced wine and broth, cover and set slow cooker to low 8 hours.
