Transport yourself to the islands with this citrus, savory rub for fish and chicken and Veggies. Lemon peel and lime powder add a tang and freshness to this extraordinary rub. Try this with Mahi-Mahi for some awesome fish tacos! Or add some zip to your grilled chicken breast, or shrimp!
Mahi-Mahi Fish Tacos:
Six 5 oz. Mahi-Mahi fillets, sliced lengthwise
2 T Aimee's Home Cookin' KEY WEST DRY RUB
In zip-top bag, add dry rub to fish and marinate in refrigerator one hour.
Preheat oven to 400F. Line baking sheet with parchment paper, and place fish on paper. Bake for 20 minutes.
1 head green cabbage, shredded
Juice of 1 lime
2 tsp. agave
2 T minced red onion
1 T minced jalapenos
1 T minced cilantro
Salt & pepper to taste
Combine all ingredients, allow to marinate 30 minutes to 8 hours before serving.
Deep fry corn tortillas 45 seconds each and place on paper towels. Place fish on tortillas, top with slaw and a squeeze of fresh lime.
One 3 oz. jar equals roughly 8 Tablespoons so you have plenty to spread around!
