Fred's Pho Seasoning is my riff on a Vietnamese flavoring for soup. Check out the recipe below.
I hand blend my seasonings in small batches so can rest assured that your meal will include the freshest spices.
One 3 oz jar equals roughly 8 Tablespoons so you have plenty to spread around!
Fred's Pho with Pork or Chicken
1 lb. Country Style ground pork or ground chicken
2 cloves of garlic, minced
1 T. AHC Fred's Pho Seasoning
1 T vegetable oil
4 C low-sodium chicken broth
4 C fresh mustard greens, torn into little pieces
4 scallions, sliced on the bias
2 T low-sodium soy sauce or Tamari
1 tsp. fish sauce ( nam pla or nuoc nam)
12 oz. rice noodles
Kosher salt & pepper to taste
Fresh basil, torn up
Mix pork/chicken with Fred's Pho seasoning in a medium bowl. Heat oil in a large pot over medium heat. Add pork/chicken mixture and cook, stirring and breaking up with spoon, until browned and a bit carmelized 10-12 minutes. Add broth and bring to a boil; reduce heat and simmer 10-15 minutes. Add mustard greens, scallions, soy sauce/Tamari and fish sauce and cook, stirring occasionally, until greens are tender 5 minutes, season with salt & pepper. Meanwhile in a separate pot cook noodles according to package directions & drain. Divide noodles among bowls and ladle soup over the top. Finish with fresh basil leaves. Enjoy!
