PREP AHEAD OF TIME FOR BETTER FLAVOR
4 pounds of chicken wings
1 bottle of Cholula hot sauce~ or your favorite hot sauce~Yardbarkin Iguana is a favorite too
1/2 C olive oil
2 T Worchester sauce
2 T soy sauce
Combine and pour over wings and seal in a extra large zip-top bag. 4-6 hours to overnight.
Remove from marinade and place on wire racks sprayed with cooking spray to drain excess liquid. Pat dry with paper towels and season with 2-3 Tablespoons Aimee's Home Cookin' WILDCAT WING RUB. Place in refrigerator UNCOVERED on wire racks for 2 hours.
Preheat oven to 450 F. Bake 15 minutes, flip over and cook another 15 minutes until crispy.
serve with homemade blue cheese dressing.
Blue cheese Dressing:
1/2 C well-shaken buttermilk
1/2 C mayonnaise
1 T fresh lemon juice
1/4 tsp. Worchester sauce
1 clove of garlic, minced
1/4 tsp. kosher salt
1/4 C fresh flat leaf parsley
2 oz. crumbled blue cheese, 1/2 cup
2 T finely chopped fresh chives
1/8 tsp. black pepper
In a food processor fitted with a steel blade, process buttermilk, mayo, lemon juice, Worchester sauce, garlic, and salt.
Add parsley and pulse until chopped. Add blue cheese and pulse until cheese is incorporated but dressing is still chunky.
Transfer to a bowl and stir in chives and black pepper. Dressing keeps 1 week in refrigerator.
One 3 oz jar equals roughly 9 Tablespoons so you have plenty to spread around! Perfect gift item for any grilling or cooking enthusiast!!
