Leftover Shrimp Cocktail Salad
12 Cooked cocktail shrimp, tails removed. 1/2 C Plain Greek yogurt. 1 T Cecret Lemon Dill Seasoning. 1 T Fresh lemon juice & zest of half a lemon. 1 tsp capers
Mix up & enjoy on a Salad or your favorite bread.
Step 1. Place a 4 lb chicken in a large stock pt. 2. Cover with cold water. 3. Add 2 stalks of celery halved with leaves. 4. 1 whole onion SKIN ON. 5. 1 Onion, peeled and quartered. 6.1/2 C carrots roughly chopped. 7. Simmer-DO NOT BOIL-simmering with the whole onion will give a lovely clear and golden broth. ( boiling creates frothy, cloudy stock) Simmer 2 hours. 8. Remove from heat, remove chicken, separate meat from bones, place in a separate bowl.Strain out vegetables & discard.9. In another stock pot drizzle approx 1 T olive oil & add 1 C chopped onion, 1 C chopped Carrots, sauté over medium heat 5 minutes. 10. Add chicken stock, 1 T Cecret Lemon Dill Seasoning, the reserved chicken and stock, salt & pepper to taste. I like to boil my noodles separately and add to the bowls individually to maintain a chewy texture rather than mushy. Enjoy!
